Hi Pete and welculm aboard!
Now this is a worthy cause for boo, just thinking of the millions of boaters who rely on a stick of bamboo to get around!
Here's a couple threads for a starter about drying and tempering bamboo...
Drying Bamboo (http://www.bamboocraft.net/forums/showthread.php?t=385)
Heat Curing / Tempering Bamboo (http://www.bamboocraft.net/forums/showthread.php?p=884)
Drying can be as simple or complex as we want it to be.
It helps to dry extra pieces so you can select the best pole for the application. In your situation you'll need strength and durability, and reasonably light in weight...
Species variety, it's growing conditions and age of the culm at harvest has a major affect on what you end up with, in addition to the drying/curing procedure you choose.
