One major indication of species hardiness here in the cold North East USA is, whether the culm and branches, and leaves stay green throughout the winter.
Phyllostachys dulcis culms completely freeze dries by spring, almost every year, turning mottled beige, but shoots still come up, never exceeding 1" dia.
I have found uses for them.
Other species I have are hardier, and I will prepare a list of them soon.
The winter is a great time to harvest. Micro-organisms are asleep, and you can leave things laying around, as long as you have a snow shovel.
Freeze drying is an effective way to dry and cure bamboo!
