Came across the reference to this website about making pan pipes, on a Native American Flute (NAF) woodworking group that I belong to.
In addition to guiding you on creating pan pipes it has suggestions on handling bamboo that may be of interest in other projects.

Bamboos are grasses, and so is Arundo donax. But 'technically' only about 10% of the 10,000 plus grasses are bamboos.
Apparently, (corrections welcome), one defining feature of a bamboo is that it's leaf has a petiole or leaf stalk.

BTW our viewpoint is not so puritanical.
