I am considering growing bamboo as a gourmet edible. What types are used for this and can it be done with hydroponics.

Hi Alex,
We've just started a new subforum of Growing Bamboo called 'Bamboo as a Food Crop', which your post has been moved into.
With the new bamboo shoot season just around the corner here in the US, I look forward to exchanging culinary experiences.
There are hundreds of bamboo species which are edible.
We need to put together a list by genus and species.
(I don't have time to research this at the moment so if anyone else can help ... feel free)
Another approach is to find bamboo species known to grow well in your area from which we can deduce their edibleness.
If high yield is a prerequisite, this eliminates all but the largest species.
If your interest is multiple ...
- horticultural appearance
- use of the harvested culms
- shoot harvest, smaller sizes/yield acceptable
... you will have many options
